How to make Palestinian Mujadara?

Mujadara is a traditional Palestinian dish made of lentils, rice (or bulgur), and caramelized onions. It's simple, hearty, and full of flavor. Here's how to make it:

Ingredients

  • 1 cup brown or green lentils
  • 1 cup long-grain rice (or bulgur wheat)
  • 4 large onions, thinly sliced
  • 4 tablespoons olive oil
  • 3-4 cups water or vegetable broth
  • 1 teaspoon cumin (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the lentils:

    • Rinse the lentils under cold water.
    • In a medium pot, add the lentils and 2 cups of water or vegetable broth.
    • Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, until the lentils are just tender but not mushy. Drain any excess liquid.

  2. Prepare the onions:

    • While the lentils are cooking, heat the olive oil in a large skillet over medium heat.
    • Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized and golden brown. This can take about 20-30 minutes. Be patient, as the caramelized onions are key to the flavor of the dish. Once done, set aside a portion of the onions for garnish.

  3. Cook the rice (or bulgur):

    • In the same pot used for the lentils, add the rice (or bulgur) and 2 cups of water or vegetable broth.
    • Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes (or until the rice is cooked and the liquid is absorbed). If using bulgur, it may take less time, around 10-15 minutes.

  4. Combine the ingredients:

    • Once the rice (or bulgur) is cooked, add the cooked lentils and most of the caramelized onions (reserving some for garnish) to the pot.
    • Season with salt, black pepper, and cumin (if using). Stir to combine and let the flavors meld together for a few minutes over low heat.

  5. Serve:

    • Transfer the Mujadara to a serving dish.
    • Top with the reserved caramelized onions.
    • Serve warm or at room temperature.
